Sodium propanoate or sodium propionate is the sodium salt of propionic acid which has the chemical formula Na(C 2 H 5 C O O).This white crystalline solid is deliquescent in moist air.
This species is a mold that grows on grains and baked goods. Sodium propionate can also slow or prevent the growth of the bacterium Listeria, a common contaminant in packaged cheeses and lunch meats, according to an article published in the October 2007 issue of the "Journal of Food Protection.".
Researchers are still unsure how the salt harms the gastrointestinal tract but posit that the body is not meant to digest excessive amounts of sodium propionate. Studies have shown that taking in too much of the salt can cause distress, with symptoms such as diarrhea, bloating, nausea, and vomiting.
